INGREDIENTS PER 6 PEOPLE

spaghetti, 17 oz
smoked bacon, 7 oz
red wine, 2 glasses
olive oil, 5 tbsp
onion, 1 big
Pecorino cheese, 2,1 oz

PROCEDURE

In a big pan put a bit of oil and, when it’s hot, add the onion (into small pieces) and the bacon (divided into cubes) and cook it (for 3-4 minutes).
After this add one of the two glasses of red wine, reduce the heat, and continue cooking covering with a lid. While the onion and the bacon are cooking you can prepare spaghetti: in a medium saucepan, bring water to a boil.
Salt and put in the spaghetti (do not break them!). Simmer for the time indicated and drain, combining pasta with the bacon and the wine sauce. Add the second glass of red wine and a bit of salted cooking water (maintaining a medium heat).
After 1 or 2 minutes the spaghetti are ready to be served with a bit of Pecorino grated on top!
