Wholemeal pastry with extra virgin olive oil

INGREDIENTS PER 8 PEOPLE

pastry flour, 1+1/4 cup
wholemeal flour, 1 cup
egga, 2 whole + 1 egg yolk
sugar, 1/2 cuo
e.v.o. oil delicate, 1/2 cup
the grated rind of 1 lemon
baking powder, 1 tbsp
a hint of bourbon vanilla extract
a pinch of salt

PROCEDURE

With the immersion blender whisk the eggs pouring the two oils wire, in few minutes the mixture will be thick and creamy . In a bowl, pour the flour and baking powder , sugar, salt, vanilla , lemon zest , the mixture of oil, eggs . Mix quickly with your fingers until completely absorbed all the flour , form a ball and let rest 30 minutes in the fridge.
Roll out the dough between two sheets of parchment paper, cut with a pastry cutter discs , fill the molds and holes in the base with a fork . Cut discs of parchment paper and place them inside each pastry shell , spread to everyone some dried vegetables or ceramic balls to create the weight and bake at 360 F degrees for 15 minutes.
Remove the shells from the beans and the parchment paper, and bake for 5 minutes more.
