Tuscan bread with panzanella

INGREDIENTS PER 1 PEOPLE

stale tuscan bread (without salt)
tomatoes cut in small pieces
cucumber cut small slices
red onion
vinegar
oil
salt
pepper
fresh basil

PROCEDURE

Put the Tuscan bread in a bowl and add some water and a small quantity of vinegar.
When it’s soft, squeeze it and break in small pieces.
Add tomatoes in pieces, the cucumber and the red onion in slices in equal quantities.
Put the oil, salt and pepper and put it in the fridge for about 15-20 mins.
Toast a slice of tuscan bread, add a little quantity of oil on it.
Take the “pazanella” and put it on the hot tuscan bread.
Decorate with basil ans serve.
