Soft braid

INGREDIENTS PER 10 PEOPLE

All purpose flour, 1lb
Butter, 3,5oz
Sugar, 3 oz
Egg, 1
Dry yeast, 2,6 oz
Lemon, 1
Milk, 7,4/8 fl oz
Brown sugar, 1 tbsp

PROCEDURE

In a large bowl add the milk, egg, sugar, lemon zest, melted butter and whisk quickly using a fork.
Gradually combine flour with yeast, first kneading the dough in a bowl, then on a board to form a smooth paste.
Let leaven for at least 3 hours.
Grease and flour a loaf pan and set aside. Take the dough, deflate it, divide it into three pieces and form a braid.
Lay the braid into the mold and let leaven for an hour, at room temperature.
Sprinkle with brown sugar and bake at 302°F for about 45 minutes, on ventilated mode.
