Tiramisù

INGREDIENTS PER 6 PEOPLE

fresh eggs, 5
sugar, 5 Tablespoons
mascarpone, 18 oz
ladyfingers, 1 Pkg.
cocoa, q.b.
espresso, q.b.

PROCEDURE

Prepare coffee, (I usually add half a cup of water to reduce the bitterness), separate egg whites from the yolks, whip the latter with sugar. Addmascarpone and continue to mount. Whisk the egg whites until stiff and add them to cream, stirring from the bottom up, so as not to melt egg whites. Take a baking pan or individual cups, soak ladyfingers and arrange them on the bottom, forming a layer, add a layer of cream, level and proceed with the second layer of ladyfingers and cream. Level well and store in refrigerator. Before serving sprinkle with cocoa.
