Stuffed lamb breast with Roasted Potatoes

INGREDIENTS PER 5 PEOPLE

Ingredients for the lamb breast:
Breast of lamb, 21 Oz
Pine nuts, 3,3 Oz
Grated pecorino cheese, 3,3 Oz
Handful of chopped parsley

Ingredients for the roasted potato:
Medium-sized sweet potatoes, 5
Olive oil, 4 Tablespoon
Chopped fresh rosemary, stems removed, 2 Teaspoon
Salt
Pepper

PROCEDURE

For the lamb: Spread the breast of lamb, salt it, season the lamb with pine nuts, the grated pecorino cheese and a handful of chopped parsley. Roll it and tie with butchers’ string into a neat sausage shape.
Bake at 200 ° C for 30-40 minutes. Serve hot.

For the potatoes: Peel and cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, rosemary; toss until the potatoes are well coated.
Place potatoes in a single layer on a roasting pan. Roast in the oven at 200°C for 45 minutes to 1 hour or until browned and crisp. Remove the potatoes from the oven and serve hot.
