Chicken skewers with vegetables and saffron rice

INGREDIENTS PER 4 PEOPLE

chicken breast, 14 oz
onion, 1
zucchini, 2
yellow pepper, 1
salt, to taste
pepper, to taste
extra virgin olive oil, 4 tbs
rice, 14
saffron, 2 pinch
extra virgin olive oil, 2 tbs

PROCEDURE

Cut into pieces the chicken breast.
Cut the onion into slices.
Cut the zucchini into round-slices.
Cut the yellow pepper into pieces.
Season with salt and pepper.
Cook the rice in salted boiling water. Pour the saffron powder.
Add the extra virgin olive oil and season well. Then prepare the skewers with all the ingredients. Grill the skewers 5-6 minutes on each side on the De Longhi grill. Serve with saffron-rice.
