INGREDIENTS PER 4 PEOPLE
Water, 8,5 fl oz
White sugar, 8 oz
Lemon zest, 1
Lemon juice, 8,5 fl oz
Egg white, 1
Mint leaves, 10
Mix sugar and water. Cook until it begins to boil.
As soon as the mixture appears sticky, remove from heat and add the lemon zest and mint leaves and let it infuse for 30 minutes.
Let it cool and filter the mixture.
When the mixture gets cold, add the lemon juice and mix.
Pour into gelato maker.
When the mixture starts to solidify, beat the egg white and add it to the mixture.
The sorbet will be ready in about 40 minutes.
Remove from the gelato maker and serve.
