Soft olive oil and yogurt ring cake

INGREDIENTS PER 8 PEOPLE

self raising flour, 1 cup
olive oil, 0,7 fl. oz
eggs, 2
brown sugar, 1/2 cup + 1 tbsp
natural yogurt, 1/2 cup
a pinch of salt
berries
vanilla icing sugar to decorate
a ring mould

PROCEDURE

In a bowl, whip together eggs and sugar until obtainig a pale and creamy mixture. Add sifted flour and pour it in the bowl, gently incorporating it to the eggs. Then, add olive oil, yogurt and salt. Stir well.
Pour the mixture into a mould and cook at 356°F for about 30 minutes, until the surface gets golden.
When cooked, let it cool down out of the oven. Sprinkle with vanilla icing sugar and put the fruit in the middle.
