INGREDIENTS PER 8 PEOPLE

Organic baking flour, 9 Oz
Yellow corn flour, 5 Oz
Caster sugar, 6 Oz
Skinless ground almonds, 6 Oz
Butter, 4 Oz
Lard, 3 Oz
Egg yolks, 2
Grated zest of lemon, 1
Vanilla bean (seeds), 1/3

PROCEDURE

Method
Melt both butter and lard.
Mix both yellow corn flour and flour together with vanilla, add all the remaining ingredients and then stir all them together until it looks like bread crumbs.
Put this mixture into an oven plate and level it without pressing it.
Lightly pat the oven plate on the table surface a couple of time to make the mixture more compact.
Bake the mixture for 35/45 minutes, at 160*, until gold.
