Sbreghe biscuits

INGREDIENTS PER 8 PEOPLE

Eggs, 3
Almonds, 8,8 oz
Pastry flour, 2 + 1/2 cups
Sugar, 1+1/4 cup
Zest of one lemon
Vanilla extract, 1 tsp

PROCEDURE

Put the flour on your worktop. Make a hole and add the eggs, sugar, almonds, lemon zest and vanilla extract. With your hands combine all the ingredients together making a smooth loaf and put the dough in a greased baking tin.
If you prefer smaller biscuits you can divide the dough into two parts and put it into two tins. Cook at 338F for 30 minutes.
Wait for the loaf to cool down and slice it with a bread knife into 0,2 inch slices or even thinner.
Line the slices on a flat baking tray, then grill them quickly on both sides in the oven for no longer than one minute to avoid them burning. Wait for them to cool down and serve it with a sweet dessert wine.
