Risotto Pie With Fava beans, Pecorino And Meant

INGREDIENTS PER 6 PEOPLE

Rice, 3,3 Oz
Peeled fava beans, 7 Oz
Pecorino, 3,3 Oz
Small leek, 1
Egg, 1
Milk
Mint
Butter
Nutmeg

PROCEDURE

Cook the rice in hot salted water for about 15min, it depends on the rice.
Gently fry in a pan with some oil the leek and the fava beans and stew until they are soft. Add salt, nutmeg and some mint leaves. When the rice is cooked, put it in the pan and stir with fava beans. Add some butter, a spash of milk to make it soft and creamy. You can also use cooking water. Let it cool down and then add a beaten egg and the grated cheese. If necessary a little bit of milk to mix together and blend. Put the rice in greased muffin mold and cook in the oven for about 20mins 180°C.
