Fried potatoes in the Capri way

INGREDIENTS PER 6 PEOPLE

Medium sized potatoes, 28 oz.
Mozzarella, 2,8 oz
Tomatoes, 1
Basil leaves, 4
Sunflower oil, 78 fl. oz.

PROCEDURE

Peel the potatoes.
Helping yourself with an apple corer, remove the central part and set the ends aside (you will need them to enclose the filling).
Cut the tomatoes, mozzarella and basil into stripes.
Use them to fill the potatoes. Enclose the filling with the slices of potatoes previously set aside.
Preheat the oil at 374 °F.
Fry the potatoes for 20 minutes.
Dab the fries with a paper towel and serve hot.
