Pastiera, the traditional Naples cake

INGREDIENTS PER 12 PEOPLE

Pastry ingredients
Plain flour, 10,5 Oz
Cake yeast, 0,4 Oz
Sugar, 5 Oz
Grated zest of 1 lemon

Eggs, 2
Cold butter, 5,3 Oz
A pinch of salt

Filling ingredients
Fresh ricotta cheese, 14 Oz
Sugar, 7,2 Oz
2 yolks and 2 whites
Grated zest of 1/2 lemon
Cooked wheat, 8,3 Oz

Orange flower extract aroma
Candied orange and cedar peel, 3,3 Oz
A pinch of cinnamon
A pinch of salt

PROCEDURE

Pastry:
Pour the plain flour with the yeast in the mixer, add the sugar, a pinch of salt and the lemon zest.
Add also 2 eggs and the butter cut into cubes (colder is better).
Mix all the ingredients as fast as possibile to not overheat the butter.
Then work quickly the dough by hands. Use also a bit of flour if it can help.
Wrap the dough into the plastic wrap and let it rest in the fridge for at least 30 minutes.

Filling:
Separate 2 egg yolks from the whites.
Work the ricotta cheese with the sugar into a bowl until it becomes smooth and creamy. Add the yolks.
It’s time for adding the orange flower aroma extract.
