INGREDIENTS PER 4 PEOPLE

potatoes, 14 oz
chopped shallot, 1 tbsp
hot broth, 3 cups
pearl barley, 10 oz
asiago cheese, 7 oz

PROCEDURE

Wash, peel and break into small pieces potatoes.
Splash the chopped shallot into a medium saucepan over medium-high heat.
Add potatoes and 2-3 broth tablespoons.
Add the pearl barley and continue to cook.
Add the broth.
Reduce your heat to low and simmer with a lid on.
Let pearl barley cook for about 15 mins and then add more broth if necessary.
Remove from the heat, stir well and let serve hot with chopped Asiago cheese.
