INGREDIENTS PER 8 PEOPLE

For the filling:
cigoli, 1,7 oz
bacon, 3,5 oz
eggs, 2 hard-boiled
cheese cut into small pieces (provolone, pecorino), 8,8 oz
grated Parmigiano reggiano cheese
Neapolitan salami, 14 oz

For the dough:
salt to taste
black pepper
yeast, 1 oz
pastry flour 00, 10 cups
water, 2 cups
lard, 3,5 oz

PROCEDURE

Dissolve yeast in warm water and add to the flour with the salt and water.
Knead and let rise overnight in the heat. The next day, stir the mixture with the lard, rubbing his hands.
Roll out the dough and place all the filling ingredients (chopped). Then he rolled up and place in a baking dish (donut) greased with lard. Bake at 360° C for 50-60 minutes. Bon appétit!
