Marinated olives

INGREDIENTS PER 8 PEOPLE

Unpitted olives, rinsed and drained, 2 cups
Extra-virgin olive oil, ¾ cup
Orange slices, 3 thin
Lemon slices, 3 thin
Fresh thyme or rosemary, 2 sprigs
Red-pepper flakes (chili)

PROCEDURE

In a medium saucepan, combine olives, olive oil, orange and lemon slices, and fresh thyme. Season to taste with red-pepper flakes.

Bring to a simmer and cook, stirring occasionally, for 5 minutes. Using a slotted spoon, transfer olives, fruit and herbs to a serving dish; you can reserve oil for salads.
