Light Apple Cake with Olive Oil

INGREDIENTS PER 6 PEOPLE

flour – 2.2 cups
apples – 3
baking powder – 2 tsp
olive oil – 5 tablespoons
eggs – 2
brown sugar – a little more than 1/2 cup + extra
milk – as required
lemon zest – of 1 lemon
confectionery sugar

PROCEDURE

Mix the eggs with the sugar, the oil and the lemon zest. Slice the peel the apples thinly.
Put half of the apples in a bowl with the mixture and the flour with the baking powder. Stir well.
Add enough milk to make a smooth texture and put it in a round greased baking tray placing the remaining apples on top. Scatter with brown sugar and cook at 300F for about 45 minutes.
If you like sprinkle with confectionery sugar before serving.
