Lemon Olive Oil Cake

INGREDIENTS PER 8 PEOPLE

Cake
Extra Virgin olive oil, 1,8 OZ
Eggs, 2
Greek yogurt, 3 Oz
Lemon juice, 2 Oz
Granulated sugar, 6 Oz
Baking powder, 1,0 Oz
All-purpose flour, 6 Oz

Icing
1 Powdered sugar, 3 Oz
1 Lemon juice, plus more to thin glaze, 1 Oz

PROCEDURE

Preheat the oven to 350˚F. Grease a bundt pan using olive oil, then dust with flour.

Combine oil, eggs, yogurt and lemon juice in a large mixing bowl. Stir in sugar.

Into another bowl, sift baking powder and flour. When they are combined, slowly add flour to the wet ingredients as you mix.

Pour batter into the pan and bake for 40 minutes. Using a toothpick test for doneness. It should come out clean.

Then remove the cake from the oven and allow to rest. When it has cooled, turn it onto a plate.

For the icing, mix sugar and lemon juice together until smooth. Drizzle it over the cooled cake.
