INGREDIENTS PER 6 PEOPLE
Sugar, 5 Oz
Flour, 3 Oz
Lemon unwaxed or organic, 1
Natural Yogurt, 10,5 Oz
Butter, 3 Oz
Baking powder, 2 tsp
Desiccated coconut flakes, 3 Oz
Powderer sugar, to sprinkle
Whip the eggs with the sugar until you get a creamy consistency. Add the sifted flour and the baking powder, then mix well.
Melt the butter and let it cool down. Add the butter, the coconut, the yogurt and the juice of the lemon to the mixture and mix well.
Pour the mixture on a greased baking tray.
Cook it at 356F for 40 minutes.
During the last 10-15 minutes cover it up using tinfoil if the top looks too brown.
Lightly dust with powdered (icing) sugar before serving.
