He is the author of an exhilarating book: “Fettuccine Alfredo, Spaghetti Bolognaise & Caesar Salad: The Triumph of the World’s True Italian Cuisine” which tells how the foreigners imaginary has often changed our Italian classic gastronomic tradition into dishes such as spaghetti Bolognese in versions that defining “creative” would be an understatement.

Former businessman with a passion for cooking.

2) What is the episode that started your food passion?
A remote episode for opposition; the bad cooking of the refectory of my seminary sparked my passion for cooking enough to force me to cross the enclosure wall in search of something edible.

3) What does it mean to you to be an Italian chef abroad?
Not being a conventional chef, I write and I cook only for private events; It’s my mission to raise awareness of our authentic cuisine abroad.

4) What are the three essential Made in Italy products for your kitchen?
Some of our extra virgin olive oil, top quality pasta brands and Parmigiano Reggiano.

5) Who cooks at your house?
I personally cook although I have an assistant who follows me during my ‘Dubai’s Deluxe Dinner Party’ for years.

6) Which one in your opinion is the biggest stereotype foreigners have about the Italian cuisine or Italian food?
This question is answered in detail in my book ‘Fettuccine Alfredo, Spaghetti Bolognaise & Caesar Salad’. It is the triumph of the false Italian cuisine in the world. Now it’s available also the Italian language.

7) Speaking about the “Italian Sounding” phenomenon, what do you think are the solutions to oppose it?
This is a well-structured and complex topic, there are huge interests at stake by producers and restaurateurs of the ‘Italian fake’. They are using the ‘Italian sounding’ to trick consumers around the world with foreign products passed off to Italian. It can counter only with the help of our authorities, a ministry for the protection of Made in Italy, consulates and embassies, but it seems that despite the enormous economic damage to our export unfortunately are not interested on it right now!

8) What are your future projects?
A yacht that work as charter gourmet, combining good food, wines and private cruises.
