Caprese salad

INGREDIENTS PER 4 PEOPLE

buffalo milk Mozzarella cheese, 4 cups – 4 x 4.4 oz
ripe cherry tomatoes, 16
fresh basil, 16 leaves
extra-virgin olive oil, 8 tbsp
fresh or dried oregano, 1 tbsp
salt and black pepper, to taste

PROCEDURE

Wash cherry tomatoes, then mash each one with a pestle to release the flavour. Cut mozzarella into 16 thick slices and lay it on a serving plate. Top each slice with basil and a cherry tomato. Drizzle with oil and sprinkle with oregano, salt and pepper.
For a Sicilian Caprese Salad add a few extra olives or capers.
