INGREDIENTS PER 8 PEOPLE

potato starch, 1,7 oz
baking powder, 1 tsp
mixed spice, ½ tsp
boiled or steamed pumpkin, 17 oz
pastry flour, 1 cup
butter, 1 stick
milk, 2/5 cup
dark chocolate, 3 oz
icing sugar to decorate
eggs, 2
light brown sugar, 1/2 cup
dark brown sugar, 1,7 oz

PROCEDURE

 Pre-heat the oven to 180°C.
Grease a 22 cm cake tin.
Melt the butter and let cool down . In the meantime coarsely chop the chocolate.
In a bowl put the eggs and all of the sugar then beat using an electric mixer till you get a smooth mixture.
Mix together the flour, potato starch, baking powder and spices, then add the lot to the eggs mixture and beat until well incorporated.
Smash the pumpkin using a fork, then pour it to the mixture with the melted butter and milk and stir. It is time to add the chocolate, stir and pour the mixture into the cake tin.
Bake for a little more than half an hour or until the cake is well cooked, test with a toothpick.
Cool on a wire rack and sprinkle with some icing sugar before serving.
