Honey cookies with lemon and thyme

INGREDIENTS PER 6 PEOPLE

flour, 1 cup
spelt flour, 1 cup
90 g rice flour, 1 cup
5 g salt, 1 tsp
brown sugar, 1 tbsp
baking powder, 1 tbsp
olive oil, 1/4 cup
warm honey, 1/5 cup
eggs, 2
1 organic lemon
chopped thyme, 2 tbsp

PROCEDURE

Preheat the oven to 360°C. Weigh the honey and warm it, close to the oven. Whisk together flours, baking powder, salt and sugar. Squeeze the lemon and grate its peel. Combine eggs and oil, then add warm honey, lemon and stir.
Mix the liquids with the flour mixture, then add the lemon peel and thyme.
Put in the fridge for 20 minutes. Cut the biscuits and bake for 15 minutes, until golden brown.
