INGREDIENTS PER 8 PEOPLE

milk, 8,5 fl oz
cream, 3,5 fl oz
grated Parmigiano Reggiano, 7 oz
sugar, 3,5 oz
egg yolk, 1
black pepper, to taste

PROCEDURE

The night before: pour into a saucepan both milk and cream and bring to a boil.
In a bowl, stir together the yolk and sugar, add Parmigiano Reggiano and a pinch of pepper.
Pour the mixture into the saucepan with milk and cream and bring to boil lightly.
Let the mixture stand covered with a plastic wrap.
Pour the mixture into ice cream machine and let work for 40 minutes.
Let the mixture stand for 30 minutes more in the freezer.
Serve accompanied with salty snacks, bread sticks and radishes.
