Pears and caramel gelato

INGREDIENTS PER 6 PEOPLE

pears, 8,8 oz
whole milk, 8,5 fl oz
sugar, 5,3 oz
caramelized sugar, 1,4 oz

PROCEDURE

Peeled and blend the pears with sugar. Then add the milk and mix well to dissolve the sugar.
Put into Gelataio cylinder.
The gelato will be ready in 30 minutes.
Add the caramelized sugar gradually. Leave the mix for 30 seconds and then served.
