INGREDIENTS PER 4 PEOPLE
Whole Milk, 2 cups
Sugar, 1 cup
Egg Yolks, 6
Cream, 1 cup
Dried Figs, 5 oz
Cocoa Powder, 1/2 cup
Beat the egg yolks, add the cocoa powder, and mix together.
Heat and cook the mixture, but do not bring it to a boil.
Remove from the heat and let it cool. Put in the fridge for two hours.
Put the mixture into the gelato maker for 30 minutes. Towards the end, cut the dried fig into cubes and add to the gelato.
