Vanilla and muscovado gelato

INGREDIENTS PER 4 PEOPLE

whole milk, 3,38 fl oz
cream, 6,7 fl oz
muscovado sugar, 2,6 oz
vanilla pod, 1
egg yolks, 2

PROCEDURE

In a bowl whisk egg yolks and sugar.
Cook over medium heat cream and milk with vanilla. Let it cool in the fridge for 3 hours.
Pour the mix into the Gelato maker – previously cooled in the freezer – and freeze according to the manufacturer’s instructions (about 40-45 minutes).
Serve with chocolate sauce if you like.
