Cinnamon and pistachio flour gelato

INGREDIENTS PER 8 PEOPLE

milk, 5 fl oz
ground cinnamon, 1.2 oz
sugar, 5oz
whipped Cream, 5 fl oz
vanilla or vanilla essence, 1

PROCEDURE

Pour whipped cream, milk and sugar into the cooled gelato machine.
Let work for 10 minutes, then add cinnamon. Do not overdo otherwise our gelato will have a sweet and very intense taste.
Let work for 20 minutes, then combine vanilla or vanilla essence.
Let rest for 40 minutes in the freezer.
This gelato has a very strong and particular taste, we can use it to season dry cakes like apple pie or plum cake.
Advice: draw a veil of gelato between two cookies, damp it in some coconut rapè or pistachio flour and serve this dessert at tea time.
