Little oven-baked frittate with vegetables

INGREDIENTS PER 8 PEOPLE

Eggs, 3
Boiled spinach, to taste
Red peppers, to taste
Salt, to taste
Pepper, to taste
Extra virgin olive oil, to taste
Grated Parmigiano Reggiano, 1.76 oz

PROCEDURE

Beat the eggs with salt, pepper and grated Parmigiano Reggiano.
Grease the muffin molds with oil and place on the basis the spinach or the cut red peppers.
Pour the beaten eggs on the molds to cover 3/4 of it.
Bake at 356°F for 35 minutes on ventilated mode.
