Cod fillets with almond breading

INGREDIENTS PER 4 PEOPLE

cod fillets, 8
eggs, 2
pastry flour, 1 cup
sliced almonds, 100gr
stale bread, 6 slices
peanut oil, to taste

PROCEDURE

Wash cod fillets in cold water and cut them into blocks.
Beat the eggs with a pinch of salt. Blend the slices of bread and add the almonds. Meanwhile preheat oil in the fryer at 375°F.
Take each fillet and dip it in flour, then in the beaten eggs and in bread crumbs and almonds.
Fry in abundant peanut oil for 6/7 minutes until they are golden brown.
Decorate with a side dish of fresh vegetables.
