INGREDIENTS PER 8 PEOPLE

grated zest of 1 lemon
powdered sugar, 2 tablespoons
fresh ricotta, 12,3 oz
pastry flour, 3 cups
ground cinnamon
oil for frying
salt
sugar, 1 cups
chocolate flakes, 6,3 oz
butter, 2 tbsp
egg, 1
grated zest of 1 orange

PROCEDURE

Pour flour, 50 grams of sugar, a pinch of salt, orange and lemon peel on a clean workbench. In the center put butter and egg and mixing everything. You can add a few tablespoons of cold water. Carefully work the dough and once it reaches the right consistency, take a towel and wrap the whole thing. Let stand for about 30 minutes in a cool place. Add the chocolate chips with ricotta cheese and the remaining sugar and mix thoroughly. Take the dough and roll it out with a rolling pin, having a thickness of about 4 mm. With a round pastry cutter, cut the whole (12 cm).
Take all the trimmings and cut further. Spread the dough in the center and then cover with the remaining dough free, combining everything carefully. Fry the cassatelle from both sides, then putting them above the absorbent paper, to remove excess oil.
Now cassatelle are ready to be dusted with icing sugar and serve!
