INGREDIENTS PER 12 PEOPLE
flour, 2 + ¼ cups
baking powder, 3 teaspoons
baking soda, 1 teaspoon
cinnamon, 3 teaspoons
nutmeg, ½ teaspoons
salt, 1 teaspoons
applesauce, ½ cup
vanilla, 2 teaspoons
brown sugar, 1 cup
melted coconut or canola oil, ½ cup
medium sieze grated carrots, 6
Preheat the oven to 180°C and grease a baking pan. In a separate bowl, whisk together baking
powder, baking soda, flour, cinnamon, nutmeg and salt.
In anothe bowl, whisk together the applesauce, almond milk, vanilla, sugar and oil. Mix the dry
ingredients with the wet ones. Add in the carrots and stir until just combined.
Bake for 50-55 minutes or until a toothpick comes out clean.
