Cantucci biscuits with chocolate and pistachios

INGREDIENTS PER 4 PEOPLE

self raising flour, 2+1/2 cup
eggs, 2
sugar, 1/2 cup
vanilla extract, 1 tbsp
honey, 1 tbsp
the zest and the juice of one orange
unsweetened cocoa powder, 3 tbsp
butter, 3 tbsp
unsalted shelled pistachios, 4,5 oz
milk as needed

PROCEDURE

On your working base, pour flour, eggs, sugar,honey, vanilla extract, orange juice and zest and cocoa powder . Amalgamate the ingredients using a fork. Now add the butter, previously softenedand, pistachios and knead quickly.
Add some milk if the mixture feels dry: the dough must reach a smooth consistency.
Split it into 2 long thin loafs, line them on a baking tray, covered with a silicone sheet or baking paper. Cook at 360°F for 25 minutes. When ready, leave the loaves cool down a little then cut them into 1cm slices.
Toast the biscuits in the ovem for 3-5 minutes at 300 °F on both sides for 3-5 minute mor until slightly golden.
