Burratina with anchovies from Cantabrico and tomatoes confit

INGREDIENTS PER 2 PEOPLE

burratine, 2
anchovies, 8
basil
cherry tomatoes, 10
extra virgin olive oil
salt
sugar, 1 tbsp
oregano

PROCEDURE

Wash and dry tomatoes, cut them into halves and lay them in a baking dish with the cut side up. Sprinkle with salt, sugar, oregano and oil. Bake in the oven at 280°F for about 1 hour and a half.
Garnish burratina with some anchovies and tomatoes confit, served with a few basil leaves and a few drops of oil of tomatoes.
