Cookies of Novara

INGREDIENTS PER 4 PEOPLE

Flour type 00, sifted, 8 Oz
Granulated sugar, 8 OZ
Whole eggs + 1 egg yolk, 4
Granulated sugar, to sprinkle
Powdered sugar, to dust (optional)

PROCEDURE

Preheat the oven at 350 F degrees.
Beat eggs and sugar at medium speed until smooth and creamy.
Reduce the speed, then add the flour little by little until incorporated.
Pour the cookie batter into a piping bag and pipe it over a cookie sheet covered with parchment paper, shape into sticks 3 inches long (8 cm) keeping them two inches apart.
Let the batter rest for 10 minutes, then sprinkle with granulated sugar.
Bake for 5 minutes or until slightly golden.
Let cool completely before serving. If desired, dust with powdered sugar.
