Bresaola and rocket rolls

INGREDIENTS PER 4 PEOPLE

bresaola, 5,3 oz
rocket leaves, 1,7 oz
parmigiano cheese, 1,6 oz
olive oil
lemon juice
chives
pepper

PROCEDURE

Mix 1 tbsp of olive oil and 2 tsps of lemon juice in a bowl .
Lay the bresaola slices on your working surface and brush them with the mixture.
Cover the bresaola with a few rocket leaves and Parmesan shavings, then roll it and firm it well with a chive leaf.
Sprinkle with a little more olive oil and black pepper to taste. Serve with lemon wedges.
